If you're new to our little Monday blog series "From Our Kitchen Table", we want you to pull up a chair and join us at home, for our favorite vegan eats from the past week. As a way to provide some inspiration for your daily meals, we wanted to share some of the highlights of what we ate this past week. Not only the yummy elaborate recipes we test for our members and youtube channel, but many of those "whip up at the last minute" meals, that were simple but delicious. I hope this inspires you this week! Let's get to it shall we?
Our favorite breakfasts from this week
Normally a glass filled with overnight oats and fruit toppings is my go-to breakfast. But there's something in the chilly fall weather that is making me crave warm bread and a cup of coffee in the morning. When this happens, my absolute favorite baked good doesn't come from our neighborhood bakery. I wake up really early and make our very own poppy seed beer buns. These come out so warm and fluffy it's almost like having freshly baked scones for breakfast. I served them this week with some non-dairy butter, berry preserves and a cinnamon soy decaf latte of course! I made a ton of smoothies this week, but this one was my favorite. It had blueberries, blackberries and currants, banana, a little vegan pea protein powder (I had just finished a grueling strength training session which is why I added a bit of the protein to help with muscle recovery, you can also add some hemp hearts for a protein boost!), some coconut milk and some ice.
The blackberries really make the color of the smoothie pop, and they add a nice tart flavor that I love.
This was another day of craving toast!
Not only that but I wanted both a savory and a sweet breakfast. I had a piece of toast with all-natural peanut butter, some four berry jam, and made a quick tofu scramble with some crumbled tofu, mixed veggies (I usually use onions, peppers, mushrooms and spinach), some turmeric for color, a little soy sauce and I added some crispy potatoes I had leftover from another meal. The combo really worked! I had another soy latte, a must for me when I have toast for breakfast.
Our favorite lunches
This has to be one of my hubby's favorite lunches, our no-tuna melts. This combination is timeless, and we use mashed chickpeas as the base for our no-tuna salad. For these I love a German style rye bread and I only lightly toast it so that it still feels soft when I bite into it. Yes, it has some delicious melted vegan cheese too!
Yes, I know, I've become the queen of stir-fries lately, this one had lots of veggies like peppers, carrots, onion, some crispy tofu and my favorite addition for an all-natural sweet and sour stir-fry without all the sugary sauces... just add some pineapple chunks!
Our favorite dinners
This new, super quick and easy recipe for a pasta-less minestrone style soup was such a hit. We were actually planning to have a salad for dinner that day but it was very cold and I couldn't get the thought of a hot bowl of soup out of my head! So I went to our fridge and saw that the only thing I had were some leftover azuki beans, some carrots, zucchini, onions and tomatoes. I chopped up all the veggies, sautéed them in a little olive oil in a pot, added a tablespoon of tomato paste for that wonderful "umami" flavor (we'll be talking about umami soon), and I added some of the beans, some veggie broth and let that simmer and get nice and thick. I then topped it with some avocado and cilantro. Half tortilla soup (sans the tortillas) and half minestrone (sans the pasta), what a light and healthy dish for a cold night! Always keep some veggie broth or veggie bouillon at home. You can whip up a soup with practically anything you have in the fridge!

This was our little Halloween celebration grub on Saturday night with our friends Any and David. We went to a local burger joint that has a vegan burger patty you can make in your own custom burgers! You can pick and choose toppings, you can have home fries or regular fries, have a single, double or triple vegan burger. Oh my God they're good! The patty is made with couscous and vegetables, and has a delicious flavor. I had mine with pickles, onions, mushrooms and guacamole (I know right?!), all our burgers came with barbecue sauce, ketchup and mustard on the side, and lots of fries of course. Dessert came later since Any and David are our official recipe tasters, and we had filmed the massive cake below earlier that day, so they came home with us for a choco-coma!
This week's "Oh so Sweet" treat
Yup! This was our Halloween dessert! I know I'm repeating myself from last week's From Our Kitchen Table post, but that's the life of a recipe creator and tester! I had to make it quite a few times until I got it just right. It is the most decadent and naughty thing on this planet and guess what... The video is coming TOMORROW for all our Brownble Members!
