Vegan pizza heaven, movie night and holiday cooking

So much happened at Brownble this week I had a hard time choosing my favorite meals for this week's wrap up! First of all, I hope you had a wonderful Thanksgiving! We shot this little video just for you, to thank you for all your wonderful support! With Thanksgiving behind us you can definitely feel the Holiday vibes in full gear, and that's exactly what we were up to this weekend. We filmed all weekend long in one of our most intense sessions yet and I can't wait to show you all the videos we have in store for you this Holiday season! Those who know me know I'm a huge Christmas junkie, so you can expect a lot of Holiday talk from here on out. Ok, without further ado, here are our favorite meals from the past week, straight from our kitchen table. I hope these inspire you to create some yummy vegan meals this week!

Our favorite breakfasts

One of my favorite combos for breakfast is one of hubby's famous soy lattes (so frothy!), whole wheat toast with non-dairy butter and blueberry jam, and a tofu scramble with lots of veggies. So good!

I know I sound like a broken record by showing you yet another green smoothie and overnight oats, but I would be lying otherwise! These are always a part of my week. This was a pineapple, and spinach smoothie with coconut milk and some vegan pea protein for a boost.

Our favorite lunches

Some days when I want to have a different salad, something takes over and I feel like the salad genie stepped into my shoes. This one was beyond delicious! Lentils tossed in herbs lemon juice and grainy mustard, spinach, tomatoes, avocado and the best part, thinly sliced grilled zucchini. I can't wait to film it for you!

For this one I really wanted something simple, and the asparagus looked so good when I went to the market. I sautéed mushrooms, asparagus and tofu with sesame seeds and a little soy sauce. It was perfect for a small light meal.

Our favorite dinners

We went with our friends Any and David to have vegan pizzas and beer Friday night. It was just what I needed after the most intense work week. This is a tiny pizzeria in my favorite neighborhood in Madrid, it's called "Ay mi madre" and not only do they have vegan options in every section of their menu, but you can have any of their pizzas made with vegan cheese! I had my favorite pizza, their vegan BBQ seitan pizza (yes! heaven!) with vegan cheese, corn, mushrooms and onions, and Carlos had their spinach, sun-dried tomato, onion and olive pizza. We had dessert of course, that's below. There's nothing like a night with friends over beer and delicious vegan food. We felt so happy afterwards! Mostly because our friends are simply awesome.

I couldn't help myself and had to include this one which we just finished filming. It's our lentil and mushroom holiday roast with stuffing, and you'll be seeing it soon at Brownble! We also filmed that scrumptious sauce that's on top of the roast, I called it our "very berry glaze". It's perfect for the holidays.

Our favorite sweet treats

There should be an emoji depicting the face of a vegan that walks into a non-vegan restaurant and sees they have vegan desserts. The same pizzeria we went to, had the most unbelievable carrot cake and soy lattes, and when we asked if they had any vegan desserts, they told us that now they're making all their carrot cakes vegan, "that way everyone can eat them" said the waiter. It was inappropriate to hug him but I did in my mind.

Do your furry loved ones cause a total scene the second they hear popcorn popping? Carlos and I are doing a little Star Wars marathon before the December premiere and popcorn is always a must, but we are severely stalked until we cave. We always do...
