This recipe has four of my absolute favorite things, chocolate, avocado, pecans and coconut. When trying to make healthy versions of traditional desserts, you really want something that's good to your body, but that also has great flavor and texture. This quick dessert does exactly that. You wouldn't believe that even though this recipe is refined sugar free, gluten free and oil free, that it is as decadent and delicious as it is. It seriously packs a chocolate punch and will satisfy any sweet or chocolatey craving you might have with whole plant based foods that are packed with nutrients. What could be better?! Oh yeah... this dessert is also raw which means there's no cooking involved!
As you'll see in the video, I give kuddos to my dear friend Verena, blogger at Minha Cozinha Virou Um Jardim (my kitchen became a garden), for inspiring the idea for the pecan coconut crumble in this recipe. It was the absolute perfect touch, and it's based on her super yummy almond and coconut energy balls. Her blog just recently went live and it's simply wonderful! Ok, back to the recipe. This one is so simple to make, and I love serving it in individual dishes or ramekins to be passed around at parties. People love having their very own pudding.

AVOCADO CHOCOLATE PUDDING WITH A PECAN COCONUT CRUMBLE
Yield: 6-8 servings ⎮ Pre-soaking time: 30 minutes to 1 hour
Prep time: 20 minutes ⎮ Cook time: None
For the pudding:
3/4 cup dates, chopped (previously soaked in water for 30 minutes to 1 hour)
1 1/2 hass avocados
3 tablespoons cocoa powder
1/2 teaspoon sea salt
1/4 teaspoon cinnamon
1/4 cup + 1/2 tablespoon maple syrup
For the crumble base:
1/2 cup unsweetened coconut flakes
1/2 cup dates, chopped
3/4 cup pecans
1 tablespoon maple syrup
1 tablespoon water
1 pinch sea salt
Extra cocoa powder for dusting
Fresh berries and mint leaves for decoration
- Add all of the crumble base ingredients to a food processor and process until a sticky paste that holds its shape has formed. Set it aside.
- Wash and dry your food processor and add the drained chopped dates, avocado, cocoa powder, salt, cinnamon and maple syrup.
- Process until very creamy and no pieces of the dates remain. Rub it between your fingers to ensure it is silky.
- Arrange some ramekins, small bowls or even shot glasses and place some of the crumble mixture in the bottom.
- Top with the pudding, a generous dusting of cocoa powder and top with the berries and mint and serve!
