Dinner at Rayen Vegano, quick veggie sautés and homemade nut butters
We're entering Valentine's Day week and all I can think about is the video we'll be posting, perfect for this special occasion. According to Carlos it is the best recipe in our blog or membership program to date. Yup! He actually said that! I still think there are many just as good but I am EXTREMELY excited to share this one with you. I'm mentioning it now only because with recipe testing and filming it this week it should be in here with all the other yummies we had, but I don't want to ruin the surprise! You'll just have to wait until Wednesday when we post it on our youtube channel (and members, you'll have another amazing one coming tomorrow as well!). We did however eat many other delicious vegan meals this week, and here are the highlights, in the hopes that they inspire your meals too!
Our favorite breakfasts
My favorite porridge this week was this cutie pie you see in the photo. It had... wait for it.... melted homemade vanilla cashew butter right in the oats! We'll have this recipe for you really soon, it's simply divine! I topped it with strawberries, banana, raisins, pumpkin and sunflower seeds, poppy seeds, a drizzle of agave and a bit of the cashew butter to top. It's basically dessert for breakfast but completely healthy for you.
I bought a delicious whole wheat loaf of bread last week, so of course I made peanut butter and jelly toast with banana slices and sunflower seeds. You'll have the video on how to make homemade peanut butter in our membership program My Brownble in a couple of weeks! All natural peanut butter is the best, especially when you sit in the couch with your hubby shelling peanuts while watching a Weezer concert. Love!
Our favorite lunches
It was the craziest, busiest week for us, so it was all about quick sautés for our lunches and dinners this week. This one had buckwheat, chickpeas, bean sprouts, carrots, onion, shitake mushrooms and soy sauce. Then I topped the whole thing with fresh green onions and sunflower seeds. It was amazing and you can add any veggies you have in the house.
This beauty was quite similar but a bit more Mexican inspired. It had quinoa, peppers, onions, mushrooms, cilantro, avocado and chickpeas. Can you tell I batch cook my grains and beans at the beginning of the week? This is the best tool for ensuring healthy cooking during busy days. By simply having a cooked grain, a cooked bean (or canned), and some veggies, you can sauté all day every day, and make a meal in 10 minutes
Our favorite dinners
Our top dinner this week was at our favorite vegan restaurant in Madrid Rayen Vegano. This is such a magical and special place. We always feel at home when we're there. I had the new addition to their menu, seitan wrapped in phyllo over roasted vegetables like broccoli, brussels sprouts, peppers and sweet potatoes, oven roasted apples (oh my God!), a black garlic purée, and everything was on top of the most amazing creamy mushroom gravy. Yeah...
The food was amazing, but something just makes your heart smile when you walk into a place like this one and see this cake lineup. It's like a little girls dream! Especially that big fat pink cake (which had carrot cake inside). It was such a special night. If you're wondering if we had a piece, look below!
This week's "oh so sweet" treat
This is their "Black Beast" ("La Bestia Negra"), made with a layer of cinnamon cookie crumble, a layer of chocolate cake, and then a layer of the creamiest chocolate mousse. Amazing.
