Full time doggie nurse, recipe testing burgers, healthy chocolate cake and more!

This week was rough to say the least. Our dog Nala woke up in the middle of the night on Thursday completely disoriented, dizzy, throwing up, unable to walk, with her head tilted to one side, and as you can imagine, completely nervous because of what was happening to her. We rushed her to the vet and although we'll know more in the next few days as she continues to recover, we suspect she got something called vestibular disorder which apparently is typical in senior dogs. Imagine having problems in your inner ear that completely mess up your balance and gives you the worst case of vertigo. Poor thing. She's been so sick these past few days and my heart and stomach have been in knots! We stayed home with her every single day, kept her company, gave her all her medications and even had to spoon (and syringe) feed her since she was refusing to eat. Thank goodness everything turned around on Sunday and she woke up so much better! I'´ll keep you posted on how she's doing as she continues to recover. This is why we've been a bit absent from social media these past few days and why some of our meals and pics for this week's recap today are a little simpler than usual. My whole mind, heart and soul were completely on getting Nala better. Yet another example for me of how important being healthy is. When you're sick nothing else matters. Here's the little patient with her dad. This was the day before she really started feeling better. Please keep her in your thoughts so she can make a quick recovery.

Our favorite breakfasts

This is a super yummy experiment I've been trying: apple peanut butter oatmeal! It still needs a little tweaking but it's scrumptious! I topped it with some raisins, sunflower seeds and cinnamon.

Classic overnight oats! What could be better? This one was topped with banana, strawberries and sunflower seeds.

Our favorite lunches

This was such a delicious lunch, I warmed up some black beans, some leftover quinoa, roasted some eggplant and red bell peppers and served all of that with a side salad made with watercress, cherry tomatoes, strawberries and finely chopped raw zucchini. Whenever I use watercress and strawberries in a salad the dressing is just a simple splash of balsamic vinegar. So good.

This was another one of my recipe testing ventures this week, seitan and quinoa mushroom burgers with oven fries. The flavor was AMAZING, but the texture still needs a little work. I hope to have a recipe for you soon!

Our favorite dinners

Ok, get ready, this combo of flavors and textures will make you go nuts! I roasted some sweet potato wedges and brussels sprouts under the broiler until golden and tender, topped them with some hummus and served a mini salad on the side made out of quinoa, thinly sliced spinach, tomatoes and cucumbers, and some lemon juice and olive oil for seasoning. This was easily my favorite lunch this week. Plus it's just a matter of simply combining the components which you can all prepare ahead of time. This one would also pack up perfectly to take to work.

Since we were on doggie duty this weekend, going out for our usual dinner out was a no-no. Carlos however is so resourceful. He went to our local pizzeria, ordered our favorites without cheese and then we added vegan cheese and extra toppings at home and popped them back in the oven. An awesome trick when doing this is to cover the edges of the pizza with foil (make a little border so that the center of your pizza is still exposed). This way the edges won't get burnt or too crispy and the cheese will melt perfectly.

This week's "oh so sweet" treat

As you can see being home-bound gave me time to do lots of recipe testing this weekend during the moments when Nala was sleeping. This is a brand new creation for a new section of super healthy desserts that will come soon to our online program. I didn't have time to add the toppings to it so this was just the base cake, a blueberry sweet potato chocolate cake. So good and a slightly healthier option than our more traditional and decadent desserts. Coming soon!
