Making morning pizza toast and diner classics from sandwiches to salads and wraps
If you read last week's from our kitchen table post you know that our little furry baby Nala was a bit under the weather. I can't thank you enough for all your kind words and smooches sent to her! Trust me, she got them all because we wouldn't stop hugging and kissing her. Let me just say, the extra dose of love worked! She is almost completely recovered and back to her usual perky and naughty self. Thank you so much for being there cheering her on. As you can see below, she's already trying to manipulate us into giving her treats, so things are finally back to normal around here (that's her treat stare... very serious and professional).
This week we still had to do a lot of babysitting since she still needed a bit of help eating and moving around, so we were basically in our little bunker, getting all sorts of amazing content ready for you, and of course there was a lot of cooking and eating! Here are some of our favorites from this past week. I hope these inspire some of your meals. I'm especially excited for this week's sweet treat, which we just filmed and is so healthy it's CRAZY. Our favorite breakfasts
You know I'm a total smoothie girl, this one was amazing! Very simple as it only had banana, spinach, coconut, a little pea protein and some almond milk.
I think this is the first time this breakfast favorite of mine has made it to the blog but I love it! I had some vegan cheese shreds left over from last week's pizza, so I made what we like to call pizza toast! All you need to do is lightly toast some whole wheat bread, drizzle a little olive oil, add some sliced tomatoes, oregano and some vegan cheese shreds and pop it in the oven under the broiler until the cheese melts a little bit. It's insanely good!
Our favorite lunches
For this meal I made some simple hummus, our indoor grilled corn on the cob (watch the video and get the recipe here!), and some grilled veggies which included peppers, shiitake mushrooms and leeks, plus, a mini tomato and cucumber salad.
BLT time! Yes, this is coming to our online program really soon. It's made with delicious homemade tempeh bacon which we're also going to teach you how to make. I think the BLT is probably my number 1 favorite when it comes to sandwiches, and you can even make an amazing ABLT by adding some avocado slices. Simply delicious.
Our favorite dinners
I had lots of tempeh bacon rolling around since I was recipe testing for the sandwiches, so I made an adaptation of a cobb salad. This had romaine lettuce and a spicy ranch style vegan dressing, tomato, avocado, carrots and our smoky tempeh bacon.
Towards the end of the weekend Nala was doing well enough that we could go out for a quick bite for dinner. We settled on Viva Burger, one of our favorite vegan restaurants in Madrid, but since we weren't that hungry we tried their wraps instead of their massive burgers for the very first time. They were amazing! Mine was kind of like a fajita wrap with chimichurri sauce and Carlos had their Swiss wrap which had roasted vegetables and vegan Swiss cheese.
This week's "oh so sweet" treat
I am so proud of this dessert (recipe and video coming soon!). Not only is it super healthy for you and gluten free, but it's almost entirely made out of fruits and vegetables, and the best part... it's the most decadent heavenly piece of chocolatey goodness ever. It's rich, moist and simply addicting. Sometimes I feel a really amazing invisible chef is creating the recipes for me and I'm just sitting there writing them down. This was one of those moments. I thought it would never ever work, but I can honestly say it's my favorite chocolate cake now. I can't wait to post the video!
