Happy Monday everyone! It's time for our weekly Monday date in which you get to see our favorite vegan eats from the past week, straight from our kitchen table. The idea is that you can steal as many ideas as you want, to get inspired for your meals too. Before we get to them, I want to give the warmest welcome to our new readers, newest members and email subscribers! We've been creating so much amazing content for you these past few weeks and I can't wait to show you. One of these goodies was the creation of our online library of vegan resources, from books to movies, online videos that you can watch for inspiration right now, dietitians you can consult from anywhere in the world, doctor directories, health resources and more. Ok, on to the delicious vegan grub! These were some of our favorites this past week.

Our favorite breakfasts

This week I made a huge discovery! I wanted to use up a bit of what was left from a can of coconut milk, and since this type is much richer than normal varieties of coconut milk, it was super thick and creamy. I mixed it with some extra soy milk and water, spinach, a frozen banana, 2 strawberries and some pea protein for the most amazing green smoothie! 

You know me and my obsession with overnight oats. These had banana slices, strawberries, pumpkin and poppy seeds. It's one of my favorite breakfasts for sure, especially due to the quick factor, since you prepare these the night before and simply add the toppings in the morning.

As you know if you read last week's From Our Kitchen Table post, we've been recipe testing some seitan goodies and I had a ton of leftovers. I made an amazing kale salad with a dijon-agave dressing, some sun-dried tomatoes, fresh tomatoes, pumpkin seeds, topped the whole thing with spicy chopped seitan and served some grilled Italian "banana" peppers on the side.

The great thing about making kale salads is that they don't wilt or go bad as quickly as lettuce based salads would. I used some of the leftovers the next day and served up a delicious Buddha bowl with some quinoa, black beans sautéed with shitakes and onions, and some avocado to top.

Our favorite dinners

My two favorite dinners this week were delicious goodies you'll soon be able to make since we just wrapped up filming these this weekend! This is a little glimpse of our portobello puff pastry rolls with pesto. I served them with a side salad, a new combo I love of watercress, cherry tomatoes, strawberries and a simple splash of balsamic vinegar.

This one has me so excited I can't even tell you. I think it's one of our very best recipes to date! These seitan satay skewers with a coconut and peanut sauce will be live for My Brownble members tomorrow, and there's something extra special about it. We had these with some quinoa and some leftover watercress salad.

This week's "oh so sweet" treat

Before you get angry at me for not offering a more decadent treat this week, I need to tell you about my latest healthy snack or post dinner sweet treat obsession. Non-dairy yogurt with a drizzle of agave, some raisins, chopped hazelnuts and pumpkin seeds, but here's what's really interesting about this one. For the sole purpose of making this a super filling treat, I mixed in some pea protein powder with the yogurt before sweetening it. I loved it! Now I make it in a little container, take a baggie full of the toppings and take both with me on the go.
