Let me start this post off by saying that I haven't slept more than 3 or 4 hours in the past few weeks. I know... bad, bad, bad. I either couldn't sleep because I was up to the wee hours working in front of my computer, or because of plain excitement and daydreaming, either way I didn't sleep. Correction, we didn't sleep! 

We actually dismantled our little Brownble office, set everything up in the dining room table so we could have more space for the biggest change we've gone through since Brownble went live.

I know you've seen our hints about it on social media, but we haven't officially announced it, until we sent each of you a personal email last night. So if you haven't yet, members, CHECK YOUR EMIAL!

ONLINE PROGRAM PARTY! OUR VERY FIRST BATCH COOKING SESSION

Guess what day it is today? I'll give you a hint: today I started my day with a workout, a walk with the dogs, breakfast with my hubby, long awesome conversations with friends, and coming up next I'll be diving into delicious vegan sushi and a romantic vegan fondue dinner for two, and yes there will be cupcakes... made out of chocolate... with frosting... Can you guess? Today is my birthday! As you can probably tell, I never celebrate without bringing you guys along for the ride, so today we're unveiling our brand new section in the online program with our very first batch cooking episode!

If there's one practical tip that has helped me eat really healthily and remove stress from my busy life it has been batch cooking. A.k.a. preparing some basics over the weekend (or whenever you have the time), and have a fully stocked fridge, filled with healthy whole foods that I can mix and match for delicious veggie bowls, or use in other recipes throughout the week. This once a week ritual has been a lifesaver, and whenever I skip it I can really tell throughout the week. I spend more money, order more takeout than I probably should, and I'm a bit more stressed trying to cook everything day in and day out. Batch cooking helps so much with this.

OUR ONLINE PROGRAM JUST GOT BETTER

Can you feel our excitement? I know I haven't talked about this in the blog, but if you're a member of our online program and you've been logging into your member area in the past few days, you've probably noticed some changes. You now have a new and improved dashboard, new descriptions and search options for your video recipes, new features, a new batch cooking section which is coming soon, an easy access resource and printables section and so much more. The best thing is, this is nothing compared to what's coming in the form of content. We have revamped My Brownble in a way that has made me feel even prouder of this space we share together. We've been slowly bringing new life to our online program so that it can become your go to guide for healthy living. We are such complex individuals, with social, psychological and physical aspects that affect our lives, that Brownble is getting bigger and bigger every day. Not only to give you the most rockin' recipes and kitchen tips, but take you out of the kitchen to a total place of optimal wellness. I don't want to give too much away, but things are about to get crazy cool in here, and that whole process is starting today and will continue to happen and grow every week from now on (we already have over 20 videos just waiting to reach you, and Carlos is editing around the clock to make it happen asap!).

NEW VIDEOS FOR MEMBERS!: CLASSIC HUMMUS AND THE BEST EGGPLANT SIDE DISH EVER!

Today in our online program we have two delicious quick sides you can make that actually go really well together! I'm talking about a creamy batch of homemade hummus and the most delicious eggplant side dish EVER.

We often serve these two together as part of what I like to call my deconstructed Arab plate, in which I serve some quinoa, a quick salad made out of cucumber, tomatoes and fresh herbs, and the roasted eggplant and hummus we're teaching you how to make today. It's amazing!

Hummus is a wonderful nutritional powerhouse and it's the perfect healthy snack along with some raw vegetables. It's also great used as a spread on sandwiches, paninis, wraps, and even on toast in the morning topped with some fresh tomatoes and greens.

NEW VIDEOS FOR MEMBERS! A CHAT ON MAKING CHANGES AND GOAL SETTING + PORTOBELLO PUFF PASTRY ROLLS WITH PESTO!

If you're anything like me, you're probably constantly making promises to yourself, vowing to make lifestyle changes, setting goals and embarking upon new challenges, especially when it revolves around your health, daily habits and wellness. I get it. I've been there so many times. I love changing things up and making promises to myself to improve certain areas of my life that need a little reboot. I have also stopped mid challenge more times than I can even count, thinking that whatever I had chosen wasn't right for me, or I simply turned a blind eye and let my past habits sneak up on me again. I can tell you this has all happened to me many times over, but I can also tell you that it stopped, and I made it all the way there.

Last year I began a one year challenge that has changed my life in so many ways and has given me such a new perspective on goal setting. That's what the first of our two member videos is all about. I'm sharing my personal experience with you, and what that ride was like, plus my 12 tips for actually accomplishing any challenge you set out for yourself. NEW VIDEO FOR MEMBERS!: AMY'S SEITAN SATAY

Something really exciting is happening today in our online program My Brownble. Not only are we cooking up this delicious recipe for seitan satay made completely from scratch with a coconut and peanut sauce, but this was actually a personal request by one of our members. You guessed it! Amy asked us to create a recipe for seitan satay and as usual we delivered. That's one of the great things about having an ongoing program with new content added weekly. I love to get special requests and we worked so hard on this one in its recipe testing stage, that I honestly believe it's one of the best recipes on the site. You can thank Amy for that!

Making seitan from scratch is well worth it, since you can really infuse a ton of flavor into it. You can't even compare it to the store-bought kind. Today we're teaching you how to make it using my favorite technique: braising, and in combination with the veggies and especially the rockin' sauce that goes with it, this really is the perfect, meaty, Asian treat. Plus it's vegan meaty goodness on a stick and that's just plain fun.

NEW VIDEOS FOR MEMBERS!: PERFECT OAT PORRIDGE AND HOW TO COOK QUINOA

If you've ever read our weekly Monday series in the blog called "From Our Kitchen Table", you know that I eat a version of oats practically every day of the week, but this was not always the case. Despite always being a kid who ate just about everything, I had a nemesis: oatmeal. I hated oatmeal with a capital H! Partly because I had always tried the one my grandpa made which was completely bland, mushy and just looked plain boring! And let me just say that my grandpa was a total gourmand, but oatmeal was his kryptonite for sure. 

The truth is that oatmeal, or oat porridge as I like to call it now since it doesn't bring back that boring visual of a bowl filled with gray goop, can be absolutely delicious. It all rests on three things, the types of oats you use, the technique you use for cooking them and what you add to that pot, and of course, the toppings. You know me and toppings right? I once used to daydream that I was going to own an ice cream shop that only had one kind of ice cream (chocolate) and 500 options for toppings. Yeah... I love them. This particular recipe I'm sharing today as part of our membership program, is quite literally my perfect porridge, meaning the kind I love and can make over and over again. Plus it's so easy to make you can easily memorize it and just whip it up early in the morning. It only takes 10 minutes to cook!
