Chipotle Breakfast Sausages

The magic of vegan cooking is you can now enter the world of making so many delicious goodies at home from start to finish.

I know vegan sausages are sold everywhere these days, and I certainly love their convenience, but when I serve these sausages to people and tell them I make the sausages in my very own kitchen, something really cool happens. Their eyes do this weird thing that says "wait...really?". It's that moment of noticing that first, they've never slowed down to think of how one actually begins to make a sausage (whether vegan or not), and then, they start wondering what the actual "meat" component is (the answer in this case: seitan!).

Today I'll teach you how to make this version of my homemade sausages, which uses chipotle chilies in adobo, and lots of delicious spices to make these extra flavorful. I recommend making a ton, freezing them, and taking them out as you wish to eat them, sautéing them right before serving. You can make these for brunch, but also for lunch or dinner. They're so hearty and satisfying, perfect as a high protein vegan meal, and full of flavor.

Banana Nut Bread

Whenever I want to make something really simple, that is sweet but not overly sweet, which means it would be perfect for both dessert and breakfast or brunch, I think of banana bread.

I grew up on this stuff because at my house, my mom always overestimated the number of bananas we could actually eat, which meant many were overly brown by the end of the week. This meant two things, over the weekend we would have our fair share of my mom's famous bananas foster, and the smell of homemade banana bread (which in my house was served with salted butter and jam on the side... go figure!) would fill every corner of the house. It's the perfect use for bananas that have gone over to the dark side.

What's not to love about banana bread? It's moist, dense, sweet, and with that perfect pairing of banana, walnuts and cinnamon that go together so well.

Hummus, Kale, Shiitake and Turmeric Toast

There are many reasons why Carlos thinks I'm a little alien from outer space. One of the biggest reasons is that when he wakes up and is thinking about vegan croissants with jams and jellies, peanut butter, sweet porridges or cereal, he walks into the kitchen, and there I am, spatula in hand, sautéing mushrooms, tomatoes, peppers, kale, or getting sauerkraut out of a jar and the hummus out of the fridge. He calls me a breakfast alien. I just call myself a savoury breakfast eater, which is actually more common than you might think!

I love having jams and jellies and croissants as much as the next person, but I always need something savory, and I simply don't think that vegetables and breakfast clash!

"Says who?!" is what I always tell Carlos when he says vegetables and breakfast together define my alien status.

Brownble's Guide to Smoothies

Let's face it, smoothies are in because we've finally found a way to make adult milkshakes and have them any time of day. For some it's an excuse to have a post workout boost of nutrition, for others it's the ideal meal on the go. For some of us smoothies are all about piling on the veggies to make sure we're getting plenty of greens and other nutrients throughout the day. For me though, although many of these reasons play a part, I love the silky smooth texture, combined with its really cold temperature, and of course, having something sweet yet nutritious.

With Mother's Day quickly approaching, I thought it was time to do another scrumptious compilation and share some of the delicious vegan goodies found all across the web. Yes, Mother's Day should be celebrated every day, but let's face it, mamas need a day that is internationally recognized and sanctioned so they can actually kick back, relax and let the pampering begin. To me, that starts with breakfast.

Moms work so hard, and this usually starts with early risers jumping up and down on their bed requesting breakfast asap. No matter how tired, groggy, or how much Jimmy Kimmel they watched the night before, they still have to get up and feed everyone from the kiddos to their partners to the hamsters, dogs and cats. This means Mother's Day breakfast is the perfect form of revenge. You get to hang out under the covers for as long as you want while everyone else in the house makes you breakfast for a change. BIG CHANGES ARE COMING: ON TECH AND TRANSFORMATIONS

Boy do I have a lot of things to tell you today. I've had THE most intense 2 weeks since starting Brownble. Why? It all started innocently enough with filming some great little surprises we have in store for you, and it then ended up in a complete tech crisis with the biggest silver lining EVER. It got me thinking about the way we approach problems. They arrive and we try so hard to put everything back the way it was. We almost go crazy with all that resistance to change, and we knock our heads against the wall wondering how we can quickly fix it, completely skipping over the beauty of challenges and pebbles in the road. They are there for a reason, and they are powerful catalysts for change. I'm going to quote one of my idols and my business mentor Marie Forleo and her motto: "Everything is figure-outable". This has become our mantra lately, since starting this blog and our online program has made us into techs, programmers, video editing and sound geeks, entrepreneurs, tax and business lunatics, when in reality we're a vegan cook and a doctor with a very big dream to help people. Boy have we had to channel this feeling that, yes, sometimes we just need to head down into what we like to call "The Brownble Bunker" (more a state of mind than an actual bunker), and figure things out.
