Baked Apples

One of the reasons I love to bake, especially pies, is that I get to make it a date with myself, my music and my kitchen. I take my time, measure out ingredients, think of a creative new combination for fillings, get my hands in the dough, do a little dance when a Beck song comes through the speakers. It's like a meditation in motion, only I get to have a piece of pie or cake afterwards. Win-win!

As much as I love these baking dates with myself, sometimes I want to make a sweet treat that requires almost no active cooking time. Something that I can just pop in the oven and have it do all the work for me. That's the recipe I'm teaching you how to make today.

Avocado Chocolate Pudding with a Pecan Coconut Crumble

This recipe has four of my absolute favorite things, chocolate, avocado, pecans and coconut. When trying to make healthy versions of traditional desserts, you really want something that's good to your body, but that also has great flavor and texture. This quick dessert does exactly that. You wouldn't believe that even though this recipe is refined sugar free, gluten free and oil free, that it is as decadent and delicious as it is. It seriously packs a chocolate punch and will satisfy any sweet or chocolatey craving you might have with whole plant based foods that are packed with nutrients. What could be better?! Oh yeah... this dessert is also raw which means there's no cooking involved!

I'm so excited to share this recipe with our Brownble members today. There's really nothing more classic than apple pie. I love how rustic this pie is, it really does transport me to that image of a country house with a pie cooling on the windowsill. There are many ways to make delicious apple pie, but I want to teach you my favorite method, in which the scrumptious filling is made by just tossing ingredients together and letting the oven do all the work.

The key to this pie is getting that crust nice and flaky, so in the video I'm teaching you the basics of creating flaky crusts from scratch, and you could actually use the same recipe for the crust for making any kind of pie, whether it's sweet or savory. We love this apple pie during the holidays served warm with some non-dairy vanilla ice cream on top, but as with all pies, it's perfect year round too!

Pb & j Dot Cookies

Is it just me or does everyone else feel like making cookies the second December hits and we get the first glimpses of the Holidays in action? I used to love making Christmas cookies as a kid with my mom. There's something so special about that smell coming out of the oven, not to mention the utter bliss of eating cookie dough. Especially, when it includes one of my favorite ingredients on this planet, peanut butter. These are so simple to make and you can use a standing mixer to make the process even easier, but a bowl and wooden spoon will also get the job done.
