If you're anything like me, you're probably constantly making promises to yourself, vowing to make lifestyle changes, setting goals and embarking upon new challenges, especially when it revolves around your health, daily habits and wellness. I get it. I've been there so many times. I love changing things up and making promises to myself to improve certain areas of my life that need a little reboot. I have also stopped mid challenge more times than I can even count, thinking that whatever I had chosen wasn't right for me, or I simply turned a blind eye and let my past habits sneak up on me again. I can tell you this has all happened to me many times over, but I can also tell you that it stopped, and I made it all the way there.

Last year I began a one year challenge that has changed my life in so many ways and has given me such a new perspective on goal setting. That's what the first of our two member videos is all about. I'm sharing my personal experience with you, and what that ride was like, plus my 12 tips for actually accomplishing any challenge you set out for yourself. Today we have a brand new video for our My Brownble members in which I'm teaching you all about two different cooking techniques I love, because they're the best for infusing a ton of flavor into dishes. One of those is the pilaf method of cooking rice, and the other is one of my favorite techniques by far: braising.

First of all, thank you so very much to everyone who has written to say they love the new design of the blog! I'm in love with it too. I'm so happy to sit down and write in it I can't even tell you, and your support is a HUGE part of that. Today I'm really excited because I get to share a delicious recipe and part 2 of our weight loss video series with our My Brownble members. If you're new to the blog and you want to know what that is, My Brownble is our signature online membership program where I teach you how to cook vegan and do it in a way that brings joy and balance into your life. We get to cook amazing dishes together and talk about all sorts of things, and you can read more details about it here. Today we're cooking up this amazing lemony leek and black bean salad, well, tossing really, as this salad requires no cooking at all! I also teach you how to make that amazing red onion pickle they serve at Mexican restaurants. You wouldn't believe how easy it is to make, and is it just me or is it simply the best topping ever? 

We've also added part 2 of our weight loss video series which I know you've loved so far. Part 1 was all about practical tips and more food related, and in today's video we get deep into our mindset and the psychology behind diets and losing weight, and we talk about exercise. This video series is quickly becoming a member favorite so I'm very excited to finally have part 2 up for you to watch!

NEW VIDEOS FOR MEMBERS!: PIÑA COLADA SMOOTHIE AND QUINOA STUFFED MUSHROOMS WITH A LEMONY TAHINI SAUCE

We've got two delicious and super healthy recipes for you today! If you committed to eating more whole plant based foods this January with us, let me just say you're doing great! Today we're giving our members two new videos to continue on this journey, starting with the most tropical and refreshing piña colada smoothie. I love having plant protein rich smoothies at the end of my workouts to fill my body up with goodness and refuel, and this one is definitely one of my favorites and it's so quick to make.

The second video we have for members this week is one of Carlos's favorites as it includes one of his favorite foods on this planet: mushrooms! Mushrooms provide countless health benefits, a delicious meaty texture, and the very ellusive umami flavor which has been proven to really satisfy cravings. Here's why I like them though, they're perfect for stuffing with even more deliciousness! These quinoa stuffed mushrooms are filled with the most flavorful veggies and herbs, and everything is drizzled with a creamy lemony tahini sauce. You won't believe how yummy these are, and perfect if you're trying to have a protein rich meal without too many added starches.

NEW VIDEOS FOR MEMBERS!: RAW ZUCCHINI LASAGNA WITH PISTACHIO PESTO AND HOW TO COOK BULGUR WHEAT

Boy am I excited with the videos we're sharing with all our members today. This dish is so good for you, yet it is incredibly filling and the textures and flavors will make you go wild! Don't be fooled by its super healthy look, this one is a total favorite at our house and it will fill your body up with so much goodness you'll be making it all the time.

Did I mention the fact that it's gluten free and raw? This means there's no cooking required so it's almost impossible to mess it up. All you need is a food processor, and I use a mandolin slicer to cut up the zucchini but this is completely optional since you could use a knife or even a vegetable peeler. 

The thin zucchini strips are layered with a delicious almond herb ricotta and everything is topped with a pistachio, spinach and basil pesto that is simply divine.

We promised to make January our tribute to health month and base our meals on wonderful whole plant foods that nourish us, so when it was time to choose the first video for members for 2016, it had to be the perfect green smoothie.

Smoothies are basically 5 minute creamy and scrumptious meals in a glass, and if you get really creative you can pack more of a nutrient punch than you would in a traditional meal! They are truly wonderful, especially as a recovery meal after a long workout or as a meal to take on the go on busy days when you don't have time to make breakfast.
