Just in time for Valentine’s Day, we thought we would teach you how to make one of those quintessential breakfast staples which can also moonlight as a snack or as dessert! To me nothing is more fun or romantic as a yummy breakfast shared together, and I also happen to love making a great delicious breakfast for myself when Carlos has to work early. It’s a great form of self love and self care to take the time to prepare and serve a breakfast you really feel like eating, so in this month of celebrating love, we’re making these scrumptious waffles. Perfect whether you’re celebrating the love of having friends around a big brunch, a romantic breakfast for two, or the perfect party for one.Read More
With Mother's Day quickly approaching, I thought it was time to do another scrumptious compilation and share some of the delicious vegan goodies found all across the web. Yes, Mother's Day should be celebrated every day, but let's face it, mamas need a day that is internationally recognized and sanctioned so they can actually kick back, relax and let the pampering begin. To me, that starts with breakfast.
Moms work so hard, and this usually starts with early risers jumping up and down on their bed requesting breakfast asap. No matter how tired, groggy, or how much Jimmy Kimmel they watched the night before, they still have to get up and feed everyone from the kiddos to their partners to the hamsters, dogs and cats. This means Mother's Day breakfast is the perfect form of revenge. You get to hang out under the covers for as long as you want while everyone else in the house makes you breakfast for a change. What could be better?!Read More
There are matches that are made in heaven, and just off the top of my head I can think of a few: fries and ketchup, cookies and milk, chips and salsa, and yes... the famous... peanut butter and jelly. It's a childhood classic for a reason, and for me, the fun of eating means going back to those early favorites. The recipe we're sharing today, which was filmed and created specially for our friends at the amazing non-profit Vegan Outreach, is the perfect combo of one of Carlos's favorites (French toast), and mine (pb and j). This means that just in time for Valentine's Day, we decided to make a love hybrid-love baby-breakfast goodie.... 'cause nothing is more romantic than breakfast. Enter the pb and j stuffed French toast, trust me when I tell you you're not prepared for the amazing layers of flavor you'll get with this dish. It's pure bliss on a plate.Read More
It's finally time for me to share one of my go-to healthy weekly snacks with you. I'm talking about delicious and high protein crepes made with... wait for it... chickpea flour! That's right! These are refined flour free, and we're adding some healthy fats in the form of nut butters for that perfect protein+healthy fats combo that is so important for feeling satisfied and especially for hormonal health in women.
I simply love these crepes because they totally hit the spot when you're craving something sweet but you want to avoid a richer dessert. These can be made sweet with the nut butter, banana and a drizzle of agave or maple syrup, or you can also make them savory! At the end of the video I'm giving you a ton of delicious ideas for serving these, from tacos to hummus and veggie wraps and more.Read More
One of the most frequently asked questions I receive is what do you eat on a daily basis as a vegan. For me it's a no brainer since I actually have more variety in my diet now than before I was vegan, but I completely understand how this can be a complete mystery to someone eating a standard meat centered diet. I can understand it because I was once that person that thought all vegetarians and vegans ate were beans and rice. Breakfast especially can seem daunting if you are anything like I was, a bacon and egg breakfast eater all the way. Today I'm de-mystifying vegan breakfasts for you, and trust me it's quite possibly the easiest meal to veganize with just a couple of adjustments. It's also a meal in which you'll get to eat vegan versions of your favorites more than you ever thought possible.
