Seitan is one of those things that I thank veganism for. When we go vegan we think it's going to be all about giving up foods you love. The reality is that you're really giving up some foods you love and that taste good, and exchanging them for other foods that you love and that taste good. Once you wrap your head around this new way of eating, you discover that new options abound. Ingredients and combinations you would have probably never had as a meat eater are now filling your plate. Suddenly mealtime is about new discoveries as opposed to the lack you were expecting to find. This was totally the case for me and so many vegans I know. Carlos and I eat a much more varied diet now than we ever did as meat eaters. I'm talking worlds apart!

Spinach and Tofu Ricotta Puff Pastries

I grew up eating these babies in my home country of Venezuela. The traditional ones aren't vegan, as they use ricotta cheese to make the filling, but I could not let you continue living your life without getting a little taste of this South American treat. 

Traditionally, people have them for breakfast with a latte or even chocolate milk. They are flaky, soft, pillowy, and so full of flavor. Tempeh and Kidney Bean Tortilla Burgers

The minute I tried my first veggie burger I knew that I could go vegan no problem. Burgers have always been my absolute treat, my favorite thing ever. Mostly because of the fun of it. You get to eat them with your hands, you get to choose your favorite toppings and pile them on, they include things like bread, and ketchup, and usually a side of fries... all good things am I right?

I've created several veggie burger recipes over the years and they're always my nemesis. How do you get them chewy but also firm, moist but not have them crumble on you the second you bite into them. There's a little science to getting the perfect veggie burger just right, and today I'm giving you this very simple, high protein recipe that will become a total favorite (it has at our house for sure!).

One of the most exciting things that has happened since we started Brownble was teaming up with the awesome folks at Vegan Outreach to create videos for them and their audience, with delicious recipes, lifestyle tips, meal ideas and more. Once a month, we get the chance to film something really special for them, and the recipe you're about to watch and read, has been one of my favorites!

Tofu and Potato "Breakfast for Lunch" Burrito

This has to be one of my all-time favorite recipes. I always try to keep tortillas handy because I know I can whip this up in no time, and I always have tofu and potatoes in the house.

This is one of our quick fix recipes, meaning I try to show you how to make a delicious dish without the need to measure a single ingredient! This gives you so much freedom in the kitchen, and it's perfect for those very busy days in which you literally need to throw stuff together in a pan and go.

I got the idea for this dish because many moons ago, back in my meat eating days, I had a shawarma sandwich that had french fries inside the wrap along with the other ingredients. I can't even begin to describe how the textures complimented each other. This dish is 100 times better though. The contrast between the flavorful veggies, tofu and seasonings, not to mention those perfect skillet potatoes stuffed inside the soft tortillas, is simply a dream. If only you could serve it with guacamole... oh wait! Yup! It's absolutely heavenly, and one of my favorite recipes.

PB and J Roll Ups

Peanut butter and jelly are still one of the most classic and delicious pairings in food, and although you can never go wrong with the simplest peanut butter and jelly sandwich, we've changed the concept ever so slightly in the recipe we have for you today. These roll ups are the perfect snack, and in the simplest preparation you're getting a healthy dose of protein (did you know that peanuts aren't nuts but actually legumes?!), some whole grains, fruit, more protein as well as powerful antioxidants in the little surprise we're adding inside, and the sweet and yummy taste of jam. I always prefer to opt for a natural jam, sweetened only with fruit itself, and all-natural peanut butter without any added sugars or fats.

Kids love these roll ups and you can cut them and serve them on a plate, or eat them burrito style like I like to do. Serve them with some fruit or my favorite way, with a cold glass of your favorite non-dairy milk. You won't believe how delicious they are and how simple they are to make. BBQ Black Bean and Portobello Mushroom Sliders and Crispy Oven Potato Wedges

Today we're teaching you how to make the most meaty and delicious mini vegan burgers or sliders. Our favorite thing about these is they come together with leftover beans and rice! I always recommend cooking up a batch of rice and a batch of beans at the beginning of the week so you always have your base for delicious vegan bowls, but here's a recipe where you can transform that into the most beautiful and comforting meal. Who doesn't love a good old burger and fries combo?!

We're topping the veggie burgers with some barbecue sauce and a yummy portobello and crispy onion topping, and we're also showing you how to make crispy oven potato wedges to go with your meal. All you need is a vegan milkshake and you'll be transported to your favorite diner.
