Seitan is one of those things that I thank veganism for. When we go vegan we think it's going to be all about giving up foods you love. The reality is that you're really giving up some foods you love and that taste good, and exchanging them for other foods that you love and that taste good. Once you wrap your head around this new way of eating, you discover that new options abound. Ingredients and combinations you would have probably never had as a meat eater are now filling your plate. This has to be one of my all-time favorite recipes. I always try to keep tortillas handy because I know I can whip this up in no time, and I always have tofu and potatoes in the house.
This is one of our quick fix recipes, meaning I try to show you how to make a delicious dish without the need to measure a single ingredient! This gives you so much freedom in the kitchen, and it's perfect for those very busy days in which you literally need to throw stuff together in a pan and go.
I got the idea for this dish because many moons ago, back in my meat eating days, I had a shawarma sandwich that had french fries inside the wrap along with the other ingredients. I can't even begin to describe how the textures complimented each other. This dish is 100 times better though. The contrast between the flavorful veggies, tofu and seasonings, not to mention those perfect skillet potatoes stuffed inside the soft tortillas, is simply a dream. Peanut butter and jelly are still one of the most classic and delicious pairings in food, and although you can never go wrong with the simplest peanut butter and jelly sandwich, we've changed the concept ever so slightly in the recipe we have for you today. These roll ups are the perfect snack, and in the simplest preparation you're getting a healthy dose of protein (did you know that peanuts aren't nuts but actually legumes?!), some whole grains, fruit, more protein as well as powerful antioxidants in the little surprise we're adding inside, and the sweet and yummy taste of jam. I always prefer to opt for a natural jam, sweetened only with fruit itself, and all-natural peanut butter without any added sugars or fats.
