3 Easy Weekday Vegan Side Dishes that Require no Measuring!

There's this restaurant I love in Madrid where you basically get to assemble your own meal. Their kitchen is in the center of the restaurant and you get to see all the different sides and components they have, and you get to pick and choose like a kid in a candy store. 

I love to recreate this feeling whenever I can at home, making several smaller components, setting them out and having everybody pick the options they love and make their own combinations of flavors.

When I do this at home, I opt for simple sides that I know so well, I can practically make them in my sleep! That way there's no stress added, and I can focus on making a special recipe, or a delicious dessert, and all my components are taken care of.

Stuffed Provençal Tomatoes

My mother was the queen of stuffed tomatoes. She had so many recipes for them. Stuffed with meat, rice, beans, you name it she stuffed 'em, but no recipe was as delicious as her Provençal tomatoes. Her version was stuffed with lots of breadcrumbs and parmesan cheese, a ton of herbs and garlic, mine is vegan of course, and a total healthy treat.

What I love most about this recipe is that it takes almost no active cooking time, almost all the magic happens in the oven with minimal fuss, it's easy to make a ton for a dinner party AND people think you slaved over this delicious side dish... and no one EVER knows the truth (insert Little Mermaid Ursula laughs here).

When it comes to eating a healthy meal at home, part of the secret to have it be delicious, filling and fun, is to feel like you've made something special, that your plate looks beautiful and like you took your time to make it. This recipe fits all those bills.

Roasted Corn and Bean Salad

Let's face it, Mexican food is the bomb, and I honestly believe that it's one of the easiest cuisines to veganize. It's all about the veggies, black beans, kidney beans, pinto beans, delicious ears of corn, corn or flour tortillas, not to mention salsa, hot sauce and avocados, three of my favorite things... EVER!

Whenever I want to cook something yummy, but that is quick and easy to make with ingredients I I have at home, I almost always think of Mexico.

This salad is a great tribute to its flavors, and the good news is you can eat it as is, stuff it into a taco or burrito. Anything goes!

Crispy Oven Sweet Potato Fries

This post is all about the story we've all been through to try to get our sweet potato fries crispy. The potato, I mean the regular spud, set us up for failure many moons ago. Why is it so perfectly crispy on the outside, creamy on the inside every single time? Even when you make them in the oven?

Let's face it, potatoes rock. I was a total meat and potatoes kid growing up, and after I went vegan my love of potatoes remained. Sweet potatoes are no exception, I love them to death and eat them much more frequently than regular potatoes now because they are so ridiculously packed with nutrition! Smoky Tempeh Bacon

Let me start this recipe off by saying that yes, you can be vegan and eat your bacon too! By bacon I mean the smoky, crispy delicious varieties we can make at home, are minimally processed, don't contribute to animal suffering, heart disease and are non-carcinogenic! It's a win win win right?! 

We can be so attached to some animal based foods, and the only reasons are habit, and the fact that they taste good. Bacon in particular is all about that crispy and chewy texture, the saltiness and of course the fat and smokiness. How to Grill the Perfect Corn on the Cob, Indoors!

I think this is my favorite post in a while, simply because I KNOW you're going to go wild over this one. I'm jumping out of my seat with excitement!

In the summer, Carlos and I have the tradition of having a barbecue in our terrace almost every Saturday. We grill up tofu skewers, seitan sausages, peppers and onions, asparagus, tamari-maple eggplant, serve some guacamole, and yes... without fail... grilled corn on the cob. Then winter comes and grilling in the terrace becomes a total no-no and our weekly tradition has to wait until next year. Bummer... as in I miss my grilled corn bummer! Until today of course. I'm teaching you how to make THE MOST PERFECT grilled corn on the cob indoors and without a grill! Yup, you heard that right, and nope, there's absolutely no difference between them flavorwise. It's freaky!

Oil Free Crispy Potatoes

Is it just me or does anyone else refuse to eat a burger without a side of fries? I just love them! The combination of a perfectly golden and crisp starchy potato with some ketchup. They really are the perfect side to any burger or sandwich, but the deep frying doesn't make it the healthiest of choices. Now don't get me wrong, I still indulge in traditional french fries every once in a while, but when you're trying to eat a bit healthier and still get your diner fix with a burger and fries combo, learning how to roast without oil can really be a lifesaver.
