Hearty Holiday Entrées that are not the Classic Vegan Roast

You know me and my hearty holiday vegan roasts, I simply love them. Whether they're store-bought, made with seitan, our lentil and mushroom holiday roasts, nut roasts, mushroom roasts, etc, I love feeling that there's a traditional hearty main entrée in the center of the table. Since most of our friends and family who come over for Thanksgiving and Christmas aren't vegan, I always love to serve something that will seem familiar. It's why when non-vegans come over and they see this giant platter of perfectly sliced seitan roast with mushroom gravy slathered all over it they get VERY excited! Now we even have ready made roasts from brands like Tofurky, Gardein and Field Roast which even come with their own gravy and all you have to do is heat them up, cook up some sides and you have a perfect holiday meal.

What if however, this year you wanted to make something different. What if, you live in an area where these products aren't as readily available and you want to create something hearty, using simple staples you can find at the grocery store? What if you don't have the time this year to make big holiday roast from scratch? What if you simply want to mix things up and surprise your guests with something different this year? Today's episode and post is all about those hearty vegan main dishes you can make when you want to skip the classic vegan roast.

First, you have the flakiest crust, one that will make any sweet pie totally jealous. Then you have a delicious savory and creamy cashew filling with perfectly charred oyster mushrooms, leeks and chives. Then you get to top that beauty with the brightest and sweetest figs. A Thanksgiving Feast!: Vegan Versions of Traditional Thanksgiving Favorites

Can you believe we're just a few days away from Thanksgiving?! Our recent trip to London made me completely lose track of time, which meant I hadn't planned my menu, I hadn't bought the elusive pecans before the store ran out like last year, I hadn't even told the family when and where! So yes, there were a few moments of panic, rapid-fire planning, but finally, it seems to all be coming together.

In last week's episode and post we talked about those conversations that happen at the table when we're surrounded by non-vegan friends and family, and last year for Thanksgiving, I gave you tons of tips for prepping for the day, as well as some social tips for all my new vegans out there. This year, I thought we would make it all about the food! After all, what is Thanksgiving but a day that symbolizes the sharing of food together, and being thankful for the bounty nature has provided us, the fact that we have a warm plate of food on our table and a roof over our heads. It truly is a celebration of food!

Baked Apples

One of the reasons I love to bake, especially pies, is that I get to make it a date with myself, my music and my kitchen. I take my time, measure out ingredients, think of a creative new combination for fillings, get my hands in the dough, do a little dance when a Beck song comes through the speakers. It's like a meditation in motion, only I get to have a piece of pie or cake afterwards. Win-win!

As much as I love these baking dates with myself, sometimes I want to make a sweet treat that requires almost no active cooking time. Something that I can just pop in the oven and have it do all the work for me. That's the recipe I'm teaching you how to make today.

Classic Mushroom Gravy

We're gearing up for the holidays, and in my opinion there's always one dish that needs to be present whenever you are cooking a big holiday meal, a classic old fashioned mushroom gravy. This is the vegan version of the gravy that was always served at my house growing up and it's the creamiest most delicious thing ever. It's a decadent treat as many classic gravies are, since we're relying on a traditional roux to make it (a mixture of fat and flour to thicken our sauce), but this recipe feeds a crowd, and it's the Holidays so you can splurge a little on the big day. I love how the ingredients are so simple and can be found anywhere. It's so yummy, especially poured over mashed potatoes or over your favorite holiday roasts.

This reminds me, check out the yummy Christmas recipe section we've created for you! It includes our favorites for the Holidays from both our youtube channel and our online membership program.

NEW VIDEOS FOR MEMBERS! LENTIL AND MUSHROOM HOLIDAY ROAST WITH STUFFING AND A VERY BERRY GLAZE

We're so happy to finally be able to share this video with all of our Brownble members. This one is practically magic, since you turn everyday ingredients like lentils, walnuts, mushrooms and other vegetables into the most amazing roast that always knocks people's socks off. I'm seriously obsessed with this recipe and it was so much fun to do all the recipe testing for it since I got to eat it again and again for weeks! Yum! I never get tired of it.

Our very berry glaze is the perfect topping for it and is filled with antioxidants and a ton of flavor. It packs a punch! We love it as a topping for this roast but also on any of our other seitan or roast recipes. It keeps well in the fridge so it's one of those perfect make ahead dishes that will help save you time while you're cooking your holiday meals.
