Vegan Hash Brown Omelet

You know how I feel about my hybrids. I love it when I'm scrolling through Pinterest and I find someone who has created a pie made out of smores, or a cupcake that's a pancake and has coconut bacon on top instead of sprinkles. I love a good cronut, or French Toast made from a Pb and J sandwich. The little kid in me is always excited, because what's better than one of your favorite foods? Well, two of your favorite foods! Enter the hash brown omelet.

I came up with this recipe last week because for once I wasn't craving my usual avocado toast or pb and j toast in the morning. I wanted potatoes and I wanted something savory and then it dawned on me: hash browns, with a vegan omelet batter poured on top, fresh herbs, vegan cheese in the center. Oh boy!

It's ridiculously simple to make, and it will teach you two of the biggest lessons veganism has taught me:  You can make ANYTHING vegan! Followed closely by: always keep chickpea flour in the house!

The Art of Slowing Down and Why I Fail at this Miserably!

Oh boy, very few weeks of my life have been as intense as this past one, you probably already know why if you've read our last post about the HUGE surprise we had for all of our members and our email subscribers (members, remember to check your email for those special instructions on how to make the move to the new My Brownble platform!), AND so much more is coming! We have a big surprise coming soon for all of you that I'm very excited about, and we have another surprise starting today! Happy Monday everyone! As usual we're here for our regular Monday date in which we show you all our favorite vegan eats from the past week so you can get inspired for your meals! It was a really fun week full of posts and lots of hard work at Brownble. It was also recipe testing week and we're getting some comfort food goodies ready for you. I have to tell you that I find the process of recipe testing so much fun. On the surface it looks like you're just making things over and over again, but it's almost like a little science experiment. How can I make this with fewer ingredients? Healthier? Simpler to make? How can I add something that will make you and your loved ones go nutty when they try them. It's like being a little detective. I put on some tunes or a movie, the dogs are always by my side and it's a whole day in the kitchen. A WEEK'S WORTH OF VEGAN BREAKFAST IDEAS

One of the most frequently asked questions I receive is what do you eat on a daily basis as a vegan. For me it's a no brainer since I actually have more variety in my diet now than before I was vegan, but I completely understand how this can be a complete mystery to someone eating a standard meat centered diet. I can understand it because I was once that person that thought all vegetarians and vegans ate were beans and rice. Breakfast especially can seem daunting if you are anything like I was, a bacon and egg breakfast eater all the way. Tofu and Potato "Breakfast for Lunch" Burrito

This has to be one of my all-time favorite recipes. I always try to keep tortillas handy because I know I can whip this up in no time, and I always have tofu and potatoes in the house.

This is one of our quick fix recipes, meaning I try to show you how to make a delicious dish without the need to measure a single ingredient! This gives you so much freedom in the kitchen, and it's perfect for those very busy days in which you literally need to throw stuff together in a pan and go.

I got the idea for this dish because many moons ago, back in my meat eating days, I had a shawarma sandwich that had french fries inside the wrap along with the other ingredients. I can't even begin to describe how the textures complimented each other. This dish is 100 times better though. The contrast between the flavorful veggies, tofu and seasonings, not to mention those perfect skillet potatoes stuffed inside the soft tortillas, is simply a dream. If only you could serve it with guacamole... oh wait! Yup! It's absolutely heavenly, and one of my favorite recipes.

No Knead Irish Soda Bread

My mother used to say that whenever you had something that was keeping you up at night or making you sad, there was one magic remedy and that was making homemade bread. As with almost everything my mama was right. There's nothing like creating your own bread at home.  Starting with a bag of flour and turning it into breakfast. Plus you get that extra heart warming feeling of having your home smell like a wonderful bakery.

The process of making bread usually involves developing the yeast in warm water with a bit of sugar, preparing your bread dough, kneading it and then letting it rise, sometimes twice and for one or two hours.
