Pumpkin Chocolate Pecan Bars

Oh the fall. Is there ever a season as wonderful as this one? If you’re a pluviohpile like me, a Hygge addict like me, if you love the colors, the vegetables, the warming comforting meals, and that chill in the air, chance are, you’re in your very favorite season right about now.

I love the autumn and I partly blame The Gilmore Girls for my particular fall obsession. To me it felt like that show always took place in the fall, except of course for Lorelai’s classic smelling of that very first snowfall of the year, and who could forget the best spring break episode ever, in which The Shins make an appearance.

I love everything about the fall season. I mean, just think about it for a second: scarves, warm cute knitted hats, boots, Halloween, Thanksgiving, the rain, the beautiful golden warm colors in the leaves, cinnamon, ground clove, and yes… pumpkins!

The recipe I have for you today made Carlos raid the fridge so often that I think I only managed to eat a couple of these bars in total after we filmed them. They are so yummy to make, and a quick and easy vegan fall dessert.

This recipe is perfect to serve for Halloween, Thanksgiving, Christmas, or anytime you’re craving something absolutely yummy and that tastes like pumpkin pie and chocolate chips or Sausalito cookies had a baby.

Banana Nut Bread

Whenever I want to make something really simple, that is sweet but not overly sweet, which means it would be perfect for both dessert and breakfast or brunch, I think of banana bread.

I grew up on this stuff because at my house, my mom always overestimated the number of bananas we could actually eat, which meant many were overly brown by the end of the week. This meant two things, over the weekend we would have our fair share of my mom's famous bananas foster, and the smell of homemade banana bread (which in my house was served with salted butter and jam on the side... go figure!) would fill every corner of the house. It's the perfect use for bananas that have gone over to the dark side.

What's not to love about banana bread? It's moist, dense, sweet, and with that perfect pairing of banana, walnuts and cinnamon that go together so well.

Coco-Choco Halloween Truffles!: Spiders, Mini Bats and Monster Eyeballs

Halloween was a BIG deal at my house growing up. My mom would throw the most famous Halloween parties in our building, and all the kids from my class and the neighbours would attend. We would cover the house in cobwebs, have spooky treats, and my mom would sneak off at just the right moment, change into a very scary witch (to the point of being unrecognizable), and would then read the kids' fortunes. All of which were eerily accurate since she had called all their parents a week before, to ask about what was going on in their lives.

Needless to say, I love Halloween! The best part being the candy overdose of course, and the costumes.

In part 1 we talked all about vegan meatiness and marinades, part 2 was all about the basics of grilling perfect vegetables and making sides and salads to go with your meals, and today, for our last installment, it's time for some yummy drinks (boozy and PG 13 or less), and of course dessert.

Carrot Cake Cupcakes with a Vanilla and Walnut Topping

My mother in law makes the best carrot cake on the planet. Yes... on the entire planet. She is the carrot cake master and coming from someone who always loves to order carrot cake whenever it's on the menu (me!), this says a lot. I've seriously never tried one as good as hers. 

She's constantly making it for friends' parties, family barbecues, birthdays. The cake became so popular that she even started a mini business selling it to people in her gym, friends of friends, her husband's running buddies. She couldn't keep up with the orders. 

There was only one little issue with her cake. It wasn't vegan! So the second I went vegan I made it my mission to use what I had learned from watching her make her famous carrot cake, and make it into the perfect vegan recipe for carrot cake cupcakes I'm about to teach you today. Why cupcakes? Because when it comes to desserts I always feel that I'm still four years old, and I want a special little treat that is just for me. Although I have to admit I can never eat just one.

NEW VIDEO FOR MEMBERS! COUNTRY STYLE APPLE PIE

I'm so excited to share this recipe with our Brownble members today. There's really nothing more classic than apple pie. I love how rustic this pie is, it really does transport me to that image of a country house with a pie cooling on the windowsill. There are many ways to make delicious apple pie, but I want to teach you my favorite method, in which the scrumptious filling is made by just tossing ingredients together and letting the oven do all the work.

The key to this pie is getting that crust nice and flaky, so in the video I'm teaching you the basics of creating flaky crusts from scratch, and you could actually use the same recipe for the crust for making any kind of pie, whether it's sweet or savory. We love this apple pie during the holidays served warm with some non-dairy vanilla ice cream on top, but as with all pies, it's perfect year round too!

Pancakes, recipe testing, and getting Holiday ready at Brownble a.k.a CHOCOLATE!

You won't believe how crazy things have been around here. We've been filming non-stop (did you see our brand new Christmas intro and decor?!), which also means that between video shoots there's also some final recipe testing going on, not to mention the fact that we've completely revamped the site so you can have the most user friendly experience at Brownble! Now you can see everything that's new right in the home page, we've made our blog our home page since it really is wher you and I get to hang out. We've added a recipe section where both brownble members and people wanting to find out more and cook some of the recipes in our youtube videos can get cooking asap. We've also added a brand new Christmas Recipe section with all our favorite holiday recipes. Keep checking it since we'll be adding much more right up until New Year's! So yes, things have been busy, but not so busy that I can't stop by for our usual Monday date to show you the yummy grub we ate this past week to help inspire some of your meals! Sticky Toffee Date and Sweet Potato Cake

In the beginning this was simply meant to be a vegan version of a traditional English sticky toffee pudding. The more I made versions in our kitchen and tried different ingredients, the more I started falling in love with it and with the process of making it, and it sort of took a life of its own. I love it when that happens! The cake itself is much healthier than the original version, it's refined sugar free, and has only a bit of fat since the sweet potatoes acted not only as a binder but made this the moistest cake ever! We're using maple syrup and cinnamon in the cake too, which makes it the perfect treat for the holiday season. The toffee sauce on top is a whole different matter. We left it as is tradition, with non-dairy butter, heavy non-dairy cream and of course that brown sugar that gives it the perfect molasses taste. Toffee is one of those magical sweet treats, so we're letting it do its thing and we've made the cake much healthier to balance things out.

I'm usually a total chocaholic when it comes to cakes, but this one made all other cakes move over to the sidelines. I just love it and it's so much fun to make. Enjoy the video, recipe and printable below and let us know what you think in the comments!
