3 Easy Weekday Vegan Side Dishes that Require no Measuring!

There's this restaurant I love in Madrid where you basically get to assemble your own meal. Their kitchen is in the center of the restaurant and you get to see all the different sides and components they have, and you get to pick and choose like a kid in a candy store. 

I love to recreate this feeling whenever I can at home, making several smaller components, setting them out and having everybody pick the options they love and make their own combinations of flavors.

When I do this at home, I opt for simple sides that I know so well, I can practically make them in my sleep! That way there's no stress added, and I can focus on making a special recipe, or a delicious dessert, and all my components are taken care of.

The Top 10 Vegan Potato Recipes Ever!

If I was a food poet (and if that was even a thing!) there is no doubt in my mind that my first poem would be an ode to the potato. Poor spud, it's been so misunderstood, and so vilified thanks to the anti-carb craze that has seeped into our culture these days. In today's post, our very first recipe collection, we're bringing the potato back, because let's face it, few things are as delicious.

Here are some other reasons why potatoes simply rock: they're inexpensive, they're available year round and almost everywhere, they're super simple to make and they're choc-full of potassium (containing more than a banana does!) as well vitamin C, vitamin B6, fiber, iron, magnesium, calcium, antioxidants and even some healthy plant based protein. I'm so excited to share this recipe with our Brownble members today. There's really nothing more classic than apple pie. I love how rustic this pie is, it really does transport me to that image of a country house with a pie cooling on the windowsill. There are many ways to make delicious apple pie, but I want to teach you my favorite method, in which the scrumptious filling is made by just tossing ingredients together and letting the oven do all the work.

The key to this pie is getting that crust nice and flaky, so in the video I'm teaching you the basics of creating flaky crusts from scratch, and you could actually use the same recipe for the crust for making any kind of pie, whether it's sweet or savory. We love this apple pie during the holidays served warm with some non-dairy vanilla ice cream on top, but as with all pies, it's perfect year round too!

These crispy potato latkes are so typical around the holidays, but we tend to have them year round due to the fact that they're beyond scrumptious! I like to serve them topped with non-dairy sour cream, some minced chives, and of course, a little bowl of applesauce for dipping as is tradition.
