Pumpkin Chocolate Pecan Bars

Oh the fall. Is there ever a season as wonderful as this one? If you’re a pluviohpile like me, a Hygge addict like me, if you love the colors, the vegetables, the warming comforting meals, and that chill in the air, chance are, you’re in your very favorite season right about now.

I love the autumn and I partly blame The Gilmore Girls for my particular fall obsession. To me it felt like that show always took place in the fall, except of course for Lorelai’s classic smelling of that very first snowfall of the year, and who could forget the best spring break episode ever, in which The Shins make an appearance.

I love everything about the fall season. I mean, just think about it for a second: scarves, warm cute knitted hats, boots, Halloween, Thanksgiving, the rain, the beautiful golden warm colors in the leaves, cinnamon, ground clove, and yes… pumpkins!

The recipe I have for you today made Carlos raid the fridge so often that I think I only managed to eat a couple of these bars in total after we filmed them. They are so yummy to make, and a quick and easy vegan fall dessert.

This recipe is perfect to serve for Halloween, Thanksgiving, Christmas, or anytime you’re craving something absolutely yummy and that tastes like pumpkin pie and chocolate chips or Sausalito cookies had a baby.

Vegan on the Go: Simple, Delicious Vegan meals for Taking to School, Work, Picnics or Travelling

There's something about the summer that always makes me think of potlucks and picnics on the beach or by the lake. We don't have an ocean near where we live but we love taking the dogs to a beautiful reservoir nearby, where they get to swim, roll around in the sand, and we all get that change of scenery we need sometimes. As you know by now, my favorite thing to do is spending time in nature with Carlos and the dogs, and this little reservoir is one of my favorite places ever. It's surrounded by the most beautiful rocks and mountains that look almost Pre-Historic, but then you look out into the sand and water and you see families eating together, or people paddle boarding or sailing in the water, and of course, no one is having more fun than the dogs (by dogs I of course mean me).

When we go there, we always know that there will be a delicious picnic in the itinerary, including doggie treats of course, and there's something so exciting about eating a picnic near the water that I think although neither of us wants to admit it, we secretly want to dig in and start eating it the minute we arrive, even though we've just had breakfast. For this reason, our picnic usually includes several stages, the first one usually involving watermelon or cherries to help cool us off in the summer, some chips and guacamole for a bit later, delicious sandwiches for the main event and sometimes that includes a a container filled with my potato salad on the side. Then of course, something sweet for dessert which can either be more fruit, cookies or energy balls (chocolate melts so sadly that one's a no-no). As you can probably tell, picnics are one of my favorite things to do, and in today's post and episode I'm going to explain where that tradition got started, and I'm giving you tons of simple delicious vegan meals you can take on picnics or to the beach, but that are equally as portable, practical and yummy to take to work, school or when you're traveling or going on a road trip.

Brownble's Guide to Smoothies

Let's face it, smoothies are in because we've finally found a way to make adult milkshakes and have them any time of day. For some it's an excuse to have a post workout boost of nutrition, for others it's the ideal meal on the go. For some of us smoothies are all about piling on the veggies to make sure we're getting plenty of greens and other nutrients throughout the day. For me though, although many of these reasons play a part, I love the silky smooth texture, combined with its really cold temperature, and of course, having something sweet yet nutritious.

You know me and snacks. I love 'em. They've had times when they've been put on a pedestal, then deemed unhealthy and unnecessary and now they're back to being the cool kids again. That's not why I love them though. I love them because when it comes to having a balanced relationship with food, it's so important to listen to your body, not only when it's satisfied and it's time to put down the fork, but especially when it's telling you it's hungry and it's time to re-fuel. Sometimes this happens between meals and that's totally ok because snacks are amazing!
