Easy Meal ideas for When You're Tired of Eating Beans

When I had my first veggie bowl as a vegan I remember thinking “I could eat like this forever, I could never grow tired of eating beans”. I was eating one of my go-to’s, a bowl with brown rice (sometimes millet or quinoa), black beans sautéed with peppers, onions, paprika and tomatoes, pico de gallo salsa and a dollop of guacamole to top everything up. This is still a regular meal for lunch at our house, and I love black beans dearly, but the idea that I could eat beans at every single meal forever and always and never grow tired of them, well, that was an apple of a different color.

Legumes are such an important staple in vegan meals and a fantastic protein source when eating enough of them. For most of us that means 3 servings per day, or a serving at every meal as I like to say. As we get older, or when we’re going through specific life stages, 4 is a great number to strive for. Legumes doesn’t mean beans alone though, peanut butter, soy milk, tofu, tempeh, veggie meats and many other meals made with legumes count, which means you don’t have to have a bean burrito for breakfast, unless you love the idea of course!

Tempeh and Kidney Bean Tortilla Burgers

The minute I tried my first veggie burger I knew that I could go vegan no problem. Burgers have always been my absolute treat, my favorite thing ever. Mostly because of the fun of it. You get to eat them with your hands, you get to choose your favorite toppings and pile them on, they include things like bread, and ketchup, and usually a side of fries... all good things am I right?

I've created several veggie burger recipes over the years and they're always my nemesis. How do you get them chewy but also firm, moist but not have them crumble on you the second you bite into them. There's a little science to getting the perfect veggie burger just right, and today I'm giving you this very simple, high protein recipe that will become a total favorite (it has at our house for sure!).

FROM OUR KITCHEN TABLE

Full time doggie nurse, recipe testing burgers, healthy chocolate cake and more!

This week was rough to say the least. Our dog Nala woke up in the middle of the night on Thursday completely disoriented, dizzy, throwing up, unable to walk, with her head tilted to one side, and as you can imagine, completely nervous because of what was happening to her. We rushed her to the vet and although we'll know more in the next few days as she continues to recover, we suspect she got something called vestibular disorder which apparently is typical in senior dogs. Imagine having problems in your inner ear that completely mess up your balance and gives you the worst case of vertigo. Poor thing. She's been so sick these past few days and my heart and stomach have been in knots! We stayed home with her every single day, kept her company, gave her all her medications and even had to spoon (and syringe) feed her since she was refusing to eat. Thank goodness everything turned around on Sunday and she woke up so much better! I'´ll keep you posted on how she's doing as she continues to recover. This is why we've been a bit absent from social media these past few days and why some of our meals and pics for this week's recap today are a little simpler than usual. My whole mind, heart and soul were completely on getting Nala better. Yet another example for me of how important being healthy is. When you're sick nothing else matters. Here's the little patient with her dad. This was the day before she really started feeling better. Please keep her in your thoughts so she can make a quick recovery.

Are your ready for our favorites from the past week? I hope these help inspire some of your meals!
