If you read last week's from our kitchen table post you know that our little furry baby Nala was a bit under the weather. I can't thank you enough for all your kind words and smooches sent to her! Trust me, she got them all because we wouldn't stop hugging and kissing her. Let me just say, the extra dose of love worked! She is almost completely recovered and back to her usual perky and naughty self. Thank you so much for being there cheering her on. As you can see below, she's already trying to manipulate us into giving her treats, so things are finally back to normal around here (that's her treat stare... very serious and professional).

This week we still had to do a lot of babysitting since she still needed a bit of help eating and moving around, so we were basically in our little bunker, getting all sorts of amazing content ready for you, and of course there was a lot of cooking and eating! Here are some of our favorites from this past week. I hope these inspire some of your meals. I'm especially excited for this week's sweet treat, which we just filmed and is so healthy it's CRAZY. I think this has been the most exciting week since we launched Brownble. Just in case you missed it, I wrote a special Sunday edition post yesterday telling you all about why Brownble looks so different today! Check out that post here so you can read all about the new features, the rockin' sale we're having in our online program, and my favorite, my personal story is now in our About section for you to read. It was so hard to write it, it's something I have never shared in any of my past blogs or posts, and it was even harder to go through my old photos to find pics for the story (yes, baby pictures are included). I'm so glad I did it though, I think every time I revisit the past I understand it better, I can feel the sadness but also the growth and the happy moments of the past also come rushing in. I hope you find inspiration in it and you get to see why I created this space for you and me.

Mini recipe for the perfect eggplant side dish, how to make quick pickled onions and a burger date with friends

Happy Monday everyone! This week was filled with delicious goodies and a little "spring cleaning" at our house. Yes, we always do our spring cleaning in January to start the year off clutter free. I'm always amazed as to how much of a difference putting things in order makes in my cooking and eating habits. We actually gave our kitchen a total makeover and built a sort of open pantry where all our staples are visible and organized. I can't tell you what a difference this made! I promise I'll have pics for you soon (as well as a little surprise for your kitchen!). Ok, so on to the highlights of what we ate this week in the hopes that it inspires you to create some plant-based dishes of your own! I'm including the steps to make two of my favorite little additions to our meals this week.
