I've always had a hard time answering the question "What is your favorite season?". Mostly because there's Christmas in the winter and I'm a Christmas-a-holic, also because I've always had a sweet spot for the colors of fall (and the first excuse to wear boots). Whenever I think either of these have beat spring and summer though, I remember... picnics, barbecues and potlucks.

Especially those barbecues at the end of a hot summer day.

During the summer, our grill is on almost every single Saturday, and yes, you can have the meanest and manliest of barbecues and make them 100% vegan. At our house Carlos mans the grill, but I do the marinating, make the seitan sausages or steaks, rub stuff on stuff and make the salads and sides. With Mother's Day quickly approaching, I thought it was time to do another scrumptious compilation and share some of the delicious vegan goodies found all across the web. Yes, Mother's Day should be celebrated every day, but let's face it, mamas need a day that is internationally recognized and sanctioned so they can actually kick back, relax and let the pampering begin. To me, that starts with breakfast.

Moms work so hard, and this usually starts with early risers jumping up and down on their bed requesting breakfast asap. No matter how tired, groggy, or how much Jimmy Kimmel they watched the night before, they still have to get up and feed everyone from the kiddos to their partners to the hamsters, dogs and cats. This means Mother's Day breakfast is the perfect form of revenge. You get to hang out under the covers for as long as you want while everyone else in the house makes you breakfast for a change. If I was a food poet (and if that was even a thing!) there is no doubt in my mind that my first poem would be an ode to the potato. Poor spud, it's been so misunderstood, and so vilified thanks to the anti-carb craze that has seeped into our culture these days. In today's post, our very first recipe collection, we're bringing the potato back, because let's face it, few things are as delicious.

Here are some other reasons why potatoes simply rock: they're inexpensive, they're available year round and almost everywhere, they're super simple to make and they're choc-full of potassium (containing more than a banana does!) as well vitamin C, vitamin B6, fiber, iron, magnesium, calcium, antioxidants and even some healthy plant based protein.
